Bone-in Rib Roast

A bone-in rib roast also goes by the name standing rib roast; this means that the ribs of beef are stacked vertically, one atop the other. Starting from the shoulder and moving back toward the loin, the bone-in rib roast has seven ribs… and each rib along the roast carries enough tender, juicy meat to feed two hungry people. When planning your meal, you can use this as a gauge to determine how many ribs to purchase.

The meat on a bone-in rib roast closest to the loin is more tender than the meat that comes from near the shoulder – for the simple fact that the shoulder end of a cow does far more work than the back end. For this reason, too, the meat closer to the loin end of the bone-in rib roast is smaller and more tender. Still, many beef lovers prefer the texture and taste of the meat from the shoulder rib end to that at the loin end.

The bone helps retain moisture and fat within the bone-in rib roast, which makes it a prime choice for its juicy texture and silky mouth feel.
